Mmmmm…Quesadillas

Ali Does It Herself has this mouth watering recipe for Quesadillas.  I haven’t attempted to make any with the gluten free tortillas–the one  I did use literally tasted and looked like rubber. Blech.  I could technically use corn, but even with organic, I’m concerned about GMO cross contamination.

I had to laugh when she said she forgot her onions and burned them.  Oops.  Been there, done that.

Anyway, the recipe looks delicious.

  1. Next on my list of things to learn is how to make my own corn flour tortillas so that I can keep track of what goes into them. Hopefully it will work out, though with my luck I’ll burn those as well!

    • I’m a Celiac, so I’m trying to find substitutes for wheat flour that don’t taste like cardboard or rubber. I’ll look forward to your blog on the corn flour tortillas.
